Home cooked food - there is nothing better!

Here at Village Pilates we like to keep our bodies healthy and although none of us are Master Chefs, we regularly share our favourite real food recipes with each other. We've decided it's not fair to keep these yummy foods to ourselves so we are going to share them with you. In return, we ask that you email us your thoughts on the recipes and also send us your own real food recipes to add to our files. We would like to put them all in a book at some stage so email them through with a photo if possible to belrose@villagepilates.com.au.

Our first recipe is from Camilla, our beautiful ballerina...


 
 

Camila's Quinoa Creation

SERVES 4

250g quinoa
2 cloves of crushed garlic
2 tablespoons of olive oil
2 chicken breast fillets - roasted and shredded
large avocado thinly sliced
large zucchini thinly sliced and oven baked
handful of parsley & basil finely chopped
1/2 a handful of mint finely chopped
handful of walnuts for garnish
pomegranate seeds for garnish

1. Place the zucchini in the oven with a bit of olive oil and bake until golden, set aside.

2. Place the garlic and olive oil in a saucepan and heat. Stir until slightly golden, add in quinoa and stir for 30 seconds. Add water (look at your quinoa packet to determine how much). Cover and allow to cook.

3. When quinoa is soft, remove saucepan from stove and mix through mint, basil, parsley, shredded chicken, salt & pepper.

4. Place in a nice serving dish then sprinkle the avocado, zucchini, walnuts and pomegranate seeds on top. Enjoy!
